Cream Cheese Chicken Chili

I know, I know.  It’s hard to believe it’s been over a YEAR since my last blog post.  I have just been busy with life.  We have a 3 year old daughter that fills my days and five months ago we welcomed a baby boy to our family.  I tell you, I don’t know how you women blog on top of having kiddos.  I haven’t really given bloggin a second thought during this last year.  I would always think, “I really need to start blogging again,” and then real life would set in.  Dirty dishes, laundry, putting a meal on the table, being pregnant again and trying to spend time with my daughter and just being so flat exhausted at the end of the day the last thing I wanted to do was sit down at a computer.

Last week out of desperation I posted on my Facebook page, “Quick and easy dinner recipes. Go!”  I had gotten in a rut of cooking (or heating up) the same old foods.  Yes, I know, I have a whole blog full of recipes yet I was there cooking the same handful of recipes.  Since our second child has been born I’ve been doing good to get a dinner on the table. Period.  Thankfully, I got several good suggestions from friends as well as good ‘ol Pinterest and it inspired me to start trying some new recipes.

The last 3 days we’ve been iced in.  So I used this opportunity to try some of them.  I’m so glad I did!  It inspired me to drag out the laptop after the kids went to bed and start writing again.  It feels so good!

The first recipe I tried was this one, which I found on Pinterest.  I already had all the ingredients in my pantry and just grabbed a rotisserie chicken at the store to use with it.  It’s so good!

Cream Cheese Chicken Chili



  • 2 Chicken Breasts (1 rotisserie chicken, shredded)
  • 1 Can RoTel
  • 1 Can Corn
  • 1 Can Black Beans, drained and rinsed
  • 1 8 oz Cream Cheese, cubed
  • 1 Pack Ranch Dressing Mix
  • 1 T Cumin
  • 1 tsp Chili Powder
  • 1 tsp Onion Powder


Combine all ingredients in crock pot and cook on Low for 6-8 hours.  Shred chicken breasts right before serving.  Can be served with tortilla chips or over rice.

*This can also be prepared on the stove.  I heated mine on Medium heat for about 45 minutes.
