This is a great summery dessert. I made it for a friend that just had surgery the other day. She said it had just a hint of citrus flavor and was nice and light. I will make this the next time we have a church fellowship. I think it will be a big hit!
Orange Glazed Pound Cake
1 Pound Cake Mix
Water and eggs as called for on cake mix package directions
Heat oven to 350. Bake pound cake as directed in desired pan. Cool 10 minutes. Remove from pan; cool about 30 minutes. Pierce with tooth pick every 1/2 inch. Make Orange Glaze (below); pour slowly over warm cake; allowing some to drizzle down sides. Sprinkle with powdered sugar if desired.
1/2 Cup powdered sugar
3-4 Teaspoons Orange Juice
1/8 Teaspoon grated orange peel
Stir together powdered sugar, 3 teaspoons of the orange juice and the orange peel. Stir in just enough remaining juice to make glaze smooth and consistency of this syrup.
