Breakfast Boat

I got this recipe from Jimmy Dean’s website and loved it because it was so easy.  I love making breakfast on Saturday’s because it’s about the only day of the week I have enough time to really cook breakfast!  However, I don’t want to spend my whole Saturday morning in the kitchen….I just want it to taste like I did!  : )

This is a very simple dish, but is quite tasty.  If you like things with a little heat, I would suggest making this with Jimmy Dean’s HOT sausage instead of regular.  It’s adds a nice kick to it!

  • 1/2 Lb Jimmy Dean Roll Sausage (regular or hot)
  • 6 eggs
  • 2 cups shredded cheddar cheese
  • 1 cup sliced mushrooms
  • 3 cups cooked tater tots
  • salt and pepper to taste


Begin by cooking your tator tots as directed on the package.  While tots are cooking, sauté sausage in a large skillet. Beat eggs, adding cheese and mushrooms, and add salt and pepper to taste. Combine cooked sausage with egg mixture. Line baking dish with cooked tater tots and pour egg and sausage mixture over the tater tots. Bake at 350º for 35 to 40 minutes in a 13 x 9 pan or until egg mixture is firm.

Sprinkle with extra cheese if desired. (I always sprinkle with extra cheese! : )
