Easy Empanadas

Keith and I went to a friend’s last night to help her hook up her new tv while her husband is deployed.  She made a delicious dinner for us while we were over.   BBQ Empanadas!  I have had empanadas before, but never BBQ empanadas…and I LOVED them!!  She combined ground turkey with bbq sauce for the filling.  Very simple, but yet so tasty!

She said a friend of hers also makes them with a taco meat/shredded cheese mixture as well and they are quite tasty.  I could see serving those with queso!

You can make this little delights with just about anything in them and they will be good….and nice and quick!  My husband even had the grand idea for us to make extra so he could have them for lunch.  All he would have to do is pop them in the microwave and viola, lunch is served!

Oh, and you could also make turnovers with them by putting your favorite pie filling in the middle!! The possibilities are endless!

BBQ Empanadas


1 package refrigerated pie crust

1 lb ground turkey or beef

1/2 cup BBQ sauce (more if preferred)


Preheat oven to 400 degrees F. Cook ground meat until brown.  Remove from heat and mix with bbq sauce in medium size bowl and set aside.

Line 2 baking sheets with parchment paper, set aside.  Unroll pie dough, 1 at a time. Use a 4-inch round cutter, dusted with flour and cut out as many rounds as possible (about 10 to 12) of the pie dough. Repeat with second pie dough.

Beat the egg lightly in a small bowl, set aside.   To assemble empanadas, fill the center of each round with 1 tablespoon of the meat mixture.  Brush half of the perimeter of each dough round with the egg wash. Fold over 1 side of the round to make a half circle. Crimp the edges of each empanada with tines of a fork.

Place empanadas on prepared baking sheets. Brush each top lightly with egg wash.  Bake in preheated oven for 10 minutes or until golden brown.

Taco Empanadas


1 refrigerated pie crust

1 lb ground turkey or beef

1 package Taco Seasoning Mix

1 cup Shredded Cheese


Prepare taco meat as directed on taco seasoning packet.  Remove from heat and mix with shredded cheese in a medium size bowl.  Follow remaining steps above.

This sounds so good and easy. I think I will make it on a night when I crave BBQ. My husband and I just started a blog too, and it's so great to see what other easy, quick fixes people come up with, so thank you.

I make these all the time; ground beef, taco mix (or BBQ sauce if that's all I have on hand), shredded Cheddar, and small flour tortillas (fold, seal & crimp around filling), in a deep fryer. It's even EASIER than it sounds, in about 1.5 mins you have yummy Empanadas. Or fill with rotisserie chicken (shredded) and fold the flour tortilla into an envelope secured with toothpicks… now you have Chimichangas (deep fried Burritos!) Get creative… deep fry a medium (or small) sized tortilla in a round basket (holding down in center with a ladle) and fry for just a minute or two… you just made a crispy tortilla basket in which to serve a colorful Mexican salad, or a side dish of refried beans! Not a fan of frying? Roll meat mixture with shredded cheese into a large rolled up flour tortilla, pour Enchilada sauce on top and bake in the oven until browned…Enchiladas! Fabulous, Quick 'n EZ ways to put a delicious meal on the table in just minutes… highly recommended!!
