Oatmeal Chocolate Chip Cookies

These are AWESOME!!  I cooked a light meal this evening and decided to make a little something for dessert.  I’m glad I did.   These are delicious! To help cut back on cooking time, I put all of the cookie dough in a 9X13 baking pan and make cookie bars….all the greatness of cookies with a lot less work!!

Ingredients

  • 2 Sticks butter/margarine, softened
  • 1 Cup firmly packed brown sugar
  • 1/2 Cup sugar
  • 2 Eggs
  • 1 tsp. Vanilla
  • 1 1/2 Cup flour
  • 1 tsp. Baking Soda
  • 1 tsp. Cinnamon
  • 1/2 tsp. Salt (optional)
  • 3 Cups Quaker Oats (quick or old fashioned, uncooked)
  • 1 Cup Chocolate Chips

Directions

Heat oven to 350 degrees.  Beat together margarine and sugars until creamy.  Add eggs and vanilla; beat well.  Add combined flour, baking soda, cinnamon and salt; mix well.  Stir in oats and chocolate chips; mix well.  Drop by rounded tablespoonfuls onto ungreased cookie sheet.  Bake 10-12 minutes or until golden brown.  Cool 1 minute on cookie sheet; remove to wire rack.

For cookie bars: bake 30-35 minutes in ungreased 13X9 baking pan.

    Has anyone tried to add pineapple and coconut to this? It may come out great. I'm going to try and will report back.
