Mini Meatloaves

Last night we had mini meatloaves for dinner and they turned out GREAT!  I have grown to love meatloaf, but often times don’t want to make it because it takes about an hour to cook.  I don’t have that kind of time during the week after working all day, so I gave mini meatloaves a try…….LOVED IT!  I used my Easy (I mean EASY) Meatloaf recipe and used an ice cream scoop to evenly divide the meatloaf mixture into a muffin pan.  I used 1 lb. of ground turkey meat and it made about 10 mini loaves.  I put them in the oven at 350 degrees for 30 minutes and had a GREAT dinner!  My husband LOVED it!!   A great and easy way to cut way back on cooking time!

    Mmmmm…..that looks fantastic, and I bet with turkey it's not too bad for you, either. Joe doesn't do the 'loaf — one of his "my grandma made me eat it" fixations. Maybe this would be different enough to be OK. ;)

    Cute idea! I cook my meatloaf in the microwave and it is done in 15 minutes or less! I just used extra lean meat, salsa (fresh, pace, rotel) because it already has the veggies all cut up in it, and oats. I put it in a glass dish with a glass lid and cook away. I usually don't do the topping because we make sandwiches, too. But if I do the topping, a few minutes before it is finished I put the ketchup on top and then finish cooking. I think I do about 10-12 minutes for a pound of meat and then let it sit a few minutes to soak the juices back in – pretty tasty and healthy, too!
