What's Cookin' Wednesday – Wild Rice Chicken Salad

April 29, 2009

This weeks What’s Cookin’ Wednesday recipe comes from a dear friend of mine.  She made this for me recently and I LOVE it!!  It’s simply delicious.  I made this on Sunday to take to work for lunch this week.  It’s a great, light lunch but very filling.  I will be making this  A LOT from now on!

Printable Version: Wild Rice Chicken Salad

Ingredients:

1 pkg. Uncle Ben’s Seasoned Wild Rice follow directions on on box
2 cups of diced chicken, cooked (to make life easier, use a rotisserie chicken from your local grocery store)
1 can sliced water chestnuts, drained
1 cup cashews, chopped
1 1/2 cups green grapes, sliced
3/4 cup Mayonnaise

Toss together and enjoy!  Can be served with crackers.

Note: I didn’t have any water chestnuts or cashews on hand and made it without…and it turned out great!
