The Baking Beauties have provided me with yet another tasty, easy dish to add to my list of regulars in our household (thanks, ladies!)! It is great for a dinner of two or twenty! Everyone is sure to rave over this dish (and they’ll think you spent hours slaving in kitchen : )
You can also add a slice of mozzarella cheese and a little marinara sauce and easily have Chicken Parmesan (which is my favorite!)!
Ranch-Parmesan Chicken

Ingredients:
- 6 boneless skinless chicken breasts
- 1 cup dry breadcrumbs (you can also use gluten-free)
- 1/4-1/3 cup Parmesan cheese
- 1 teaspoon seasoning salt
- 1/2-1 teaspoon ground black pepper
- 1/2-1 teaspoon garlic powder
- 1 cup prepared ranch salad dressing (use bottled salad dressing, you might need a bit more dressing)
Directions:
- In a zip-loc plastic bag, marinade chicken breasts in ranch dressing for at least half an hour
- Preheat oven to 400° degrees (set oven rack to lowest position)
- Lightly grease a 13 x 9-inch baking dish
- In a shallow bowl mix together the dry breadcrumbs with Parmesan cheese, seasoned salt, black pepper and garlic powder
- Remove chicken from marinade, allowing any excess to drip off
- Coat in the breadcrumb mixture
- Place in a single layer onto a greased baking sheet or line with non-stick foil (do NOT bake in a smaller baking dish or the bottom of the chicken will be soggy)
- If desired you can sprinkle black pepper over the chicken pieces
- Bake uncovered for about 30-35 minutes or until the chicken is cooked)

I wonder if you could also do this with blue cheese. I have had great blue cheese breaded chicken. I wonder if you would still use parmesan cheese? Your picture s beautiful!
We tried this for dinner tonight. It gets a thumbs up all the way around. Even the 16 month old enjoyed it.

I made this and the whole family loved it! Just don't put it on the bottom rack of the oven like it says because it will burn. I caught mine in time and moved it up before it burned too much and it was still good. Next time I'll do it in the middle rack.
This was WONDERFUL!! I never thought to use Ranch as a marinade. My 3 year old daughter loved it as well. BIG hit in our home, and have made it a couple times since.
