Cranberry-Pineapple Minis

This would not only be great for dinner Thanksgiving Day, but it would also be great to take with you to Thanksgiving Pot-Lucks, parties, and such.  No need to worry with dishing out or a possible mess.  Everyone has their own individual serving of this tasty little side dish.

Cranberry-Pineapple Minis

Ingredients:

1 can (20 oz.) Crushed Pineapple, in juice
2 pkg.  (3 oz. each) Raspberry Flavor Jell-O
1 can (16 oz.) whole berry cranberry sauce
2/3 cup Walnut Pieces (or pecans)
1 Apple, chopped
Directions:

Drain pineapple, reserving juice. Add enough water to juice to measure 2-1/2 cups; pour into saucepan. Bring to boil. Pour over gelatin mixes in large bowl; stir 2 min. until completely dissolved.

Stir in pineapple, cranberry sauce, nuts and apple. Spoon into 24 paper-lined 2-1/2-inch muffin cups.

Refrigerate 2-1/2 hours or until firm. Remove liners.

    How cute – a mini version similar to one I make! It is yummy to serve with a cream cheese, whipped cream, powdered sugar and pecans mixed together – yum!
