King Ranch Chicken – Even the Dog Loves It!

Last night I made King Ranch Chicken for dinner (I love this dish!) for the first time since Keith and I have been married. And I can’t believe it’s been that long since I’ve made it because it’s easily one of my favorites! It’s similar to the Doritos Casserole, you just use chicken and tortillas instead of ground beef and doritos.

Ingredients ~

  • 3 chicken breasts cooked and cut into bite size pieces
  • 1 package flour tortillas
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can rotel (with juices)
  • 1 small package of shredded cheese (I used the Mexi-Blend)

Grease casserole dish and break up tortillas in bottom (I use a pizza slicer to cut mine). Place cut up chicken on top. Mix soups and rotel and pour over chicken. Cover with shredded cheese. Bake at 350 for 20-30 minutes or until cheese is melted and golden brown.

Even our dog, Riley loves this dish (and he knows what’s good! : ) We’re bad ‘parents’ and give our dog scraps. We do make him wait until we’re finished to give him any, so he just watches us like a hawk until we’re done. You can tell he loves King Ranch Chicken as much as we do : )
