- 4 zucchini (2 lb.), cut diagonally into 1/2-inch thick slices (I sometimes just cut round slices about 1/2 inch thick)
- 4 yellow squash (2lb.), cut diagonally into 1/2-inch thick slices
- 3 each: red and yellow peppers, cut into 1/2-inch-wide strips
- Olive Oil
- 1-2 Tbsp butter
- Salt and pepper to taste
PREHEAT grill to medium heat. Place vegetables, seasoning, oil and butter in grill basket lined with aluminum foil (See picture below). If you don’t have a grill basket you can make a pouch from aluminum foil…just be sure to use Heavy aluminum foil and use at least two layers. If not, your veggies will burn (I speak from experience! : )
GRILL 10 min. or until crisp-tender, turning occasionally. Place in large bowl.
