Grill Week – Grilled Veggies

Grilled Veggies, there’s nothin’ like ’em!! You can grill pretty much any veggie you’d like, but this is a pretty basic recipe. You can always add to or take aways any veggies you’d like.

Grilled Veggies


  • 4 zucchini (2 lb.), cut diagonally into 1/2-inch thick slices (I sometimes just cut round slices about 1/2 inch thick)
  • 4 yellow squash (2lb.), cut diagonally into 1/2-inch thick slices
  • 3 each: red and yellow peppers, cut into 1/2-inch-wide strips
  • Olive Oil
  • 1-2 Tbsp butter
  • Salt and pepper to taste

You could even add some mushrooms, onions, or other varieties of squash to the mix. Whatever floats your boat!


PREHEAT grill to medium heat. Place vegetables, seasoning, oil and butter in grill basket lined with aluminum foil (See picture below). If you don’t have a grill basket you can make a pouch from aluminum foil…just be sure to use Heavy aluminum foil and use at least two layers. If not, your veggies will burn (I speak from experience! : )

GRILL 10 min. or until crisp-tender, turning occasionally. Place in large bowl.
