I first had grilled pineapple at Gaucho’s Grill in west Little Rock a few years ago. I ate there on one of my first visits to LR while I still lived in Austin, TX. It is a little on the pricey side (around $21 per person for all-you-can-eat), but it is well worth it….and for me to say that, it MUST be good!! It’s a great place to go for a special occasion or celebration, for sure. The waiters go around to all of the tables with huge hunks of meat (every kind of meat you can imagine!) on a huge skew (more like a sword! – as you can see to the left) and cut off meat and put it right on your plate. This also included grilled pineapple. It was very neat….and very delicious! This is where I got my idea for today’s recipe. Grilled pineapple is so YUMMY! If you have never had it, I highly recommend it! It has been a while since I have had it but plan on making it very soon!
- 1 fresh pineapple, peeled, cored, cut into 1/2″ slices (sliced pineapple from the can also works fine)
- 1/2 cup brown sugar
- 1 Tbsp. lime juice
- 1 Tbsp. lemon juice (or you can use all lime or all lemon juice)
- 2 Tbsp. honey
- 1/4 tsp. cinnamon
Directions Prepare and preheat grill. Combine brown sugar, juices, honey, and cinnamon in a small bowl until smooth. Spread this mixture on each side of each pineapple ring.
Grill pineapple 4-5″ from medium coals for 5-10 minutes, turning once, until sugar mixture melts and pineapple is heated and tender, brushing with any remaining brown sugar mixture.
If you don’t have time for all of the preparation, you can also very easily just get your sliced pineapple (fresh or from the can) and place it on the grill and it will still be very delicious!
