Doritos Casserole

I made this for the first time last night and YUMMM!! It is delicious and SO easy! Keith loved it so much he went back for seconds (that’s always a good sign : ) I know already that I will be making this a ‘regular’ around the house!


Doritos Casserole

Ingredients

  • 1 lb. Ground Beef
  • 1 package Taco seasoning
  • 1 small onion, chopped
  • 1 can Rotel
  • 1 can Campbell’s Fiesta Nacho Cheese Soup
  • 1 can Cream of Mushroom Soup
  • 1 bag of Doritos, crushed (I used a larger one)
  • 1 8 0z bag of shredded cheese (any kind will do)
  • Sour cream and salsa for topping, if desired

Directions

  • Preheat oven to 350 degrees
  • Brown ground beef and onion, drain
  • Add taco seasoning and cook as directed on package
  • In a 9 X 13 casserole dish, layer bottom of dish with 1/2 bag of Doritos. Set other half aside.
  • In large bowl, combine taco seasoning beef and onion mixture, Rotel, Nacho Cheese Soup and Cream of Mushroom Soup. Mix well
  • Top layer of Doritos with beef mixture
  • Layer beef mixture with remaining half of Doritos Top with whole bag of shredded cheese
  • Bake until cheese is melted (approx. 20 minutes)

    This was a hit!
    Although, due to stomach issue, I cannot use ro-tel so I replaced it with mild salsa and it was YUMMY! Love the dab of sourcream on top! I have a family of 5 with 2 extremely picky eaters and everyone went back for seconds!
    This become a regular around my house!

    My mom made this recipe and since my father in law works for Frito Lay when there are out of date (like a day or two really matters anyway) I try to make this recipe (If I can keep the hubby from opening and devouring the doritos first). :)

    Hi Heather, this dish is made in a 9X13 baking dish and can have a serving size as big or as small as you like. I usually cut it like I would a lasagna. I hope this helps!

    They don't sell Nacho Cheese Soup here in Canada, what could I replace it with, so that the taste doesn't change? I think this recipe sounds great!

    I am also from up north and I use a package of Old El Paso Nacho cheese powder and make it as directed on pack. Hope this helps. Good Luck !

    This is the one thing I can make in my house that makes all four kids happy and they all come back for seconds. Even the little 6 year old loves it. I, however, make it in two variations depending how they want it. I layer the pan with doritos, then the next layer is the meat, then pour the soup mixture (with dices chilis) on top of the meat, and then cheese for the last layer. If they want it really spicy I used the spicy doritos, use a spicy taco seasoning packet, and add diced jalapanos to the soup mixture and then use can also use spicy cheese for the top. I usually make one 9×13 spicy and one 9×13 not spicy and it is gone within two days and and there is only me and 4 kids eating it. Kids love it so much…I think it is because it has the doritos in it….

    regular chedder cheese worked for me or you can also use cream of chicken, cream of celery, cream of mushroom, anything creamy but i used to use cream of celery and cream of mushroom but the cheddar cheese soup seems to be the best and I can't find the Nacho cheese soup here so I just use the cheddar cheese soup.
