I know you’re thinking I made this name up, but I didn’t….really, I didn’t!  That’s the true name of the cake, I PROMISE!!

I LOVE this cake!! It’s so light, fluffy and just plain delicious! It’s the perfect to serve after Easter dinner or during the spring/summer as a nice light dessert.

Sunshine Cake




1 yellow cake mix
1 (11 oz) can mandarin oranges with juice
4 eggs
1/2 cup oil

1 large box instant vanilla pudding
1 small/medium can crushed pineapple, chilled (I don’t care for too much pineapple in mine, so I use a smaller can)
8 oz cool whip


Preheat oven to 350 degrees. Mix all together and bake in 9 X 13 cake pan (or 2 round pans for a layered cake) for 25 minutes or until cake is done. Cool cake completely before icing it.

Mix pudding and pineapple together. Fold in cool whip and ice on cooled cake (if making a layered cake, using icing in between layers)

Yummmmmm!! You just have to try it to know how good it is!

This is a wonderful, delicious cake. I fixed it for a family picnic and it really was a hit. It was so easy to prepare that my 12 yr. old grandaughter fixed it for me.I fix it alot and no one seems to get tired of it,,and I love the name!!

I have fixed the cake before..but my recipe calls it an Madarin Orange Cake..But yes it is easy and it is wonderful..It is always a hit at church functions when I take it..

We call this cake a "Fat Free Cake" by using applesauce in place of the oil, egg beaters in place of the eggs and use sugar free/fat free cake mix, pudding mix and cool whip. It is a wonderful cake and no one even knows it is fat free.

Great tasting light and moist. Had a friend over and she had to have a second piece When she got home she called for the recipe.
